Égypte: la parade des momies

Vingt-deux momies royales égyptiennes ont été transférées, samedi 3 avril au soir, du musée de la place Tahrir vers le Musée national de la civilisation égyptienne (NMEC). Un transfert qui a pris la forme d’une parade à grand spectacle visant à en faire un événement mondial. Parmi les momies déplacées les plus célèbres : celle du pharaon Ramsès II et de la reine Hatshepsout.

À 20 h (18 h TU), c’est sous le feu des projecteurs et au son des tambours et précédés de chars pharaoniques et de danseuses vêtues à la mode de l’Égypte antique que la parade a commencé. Vingt-deux véhicules en forme de barque et contenant chacun une momie royale ont quitté le musée du Caire où les momies reposaient depuis plus d'un siècle et commencé à parader dans les les rues de la ville et le long du Nil.

Dans l'ordre chronologique, le pharaon Seqenenre Tâa (XVIe siècle avant J-C.), surnommé « le courageux », a ouvert la marche, fermée par Ramsès IX (XIIe siècle avant J-C.). Au total, 60 motos, 150 chevaux, 330 figurants (des étudiants en sport), 150 musiciens et 150 percussionnistes du ministère de la Défense ont été mobilisés pour l'événement, selon les autorités.

À la télévision

Un spectacle que les Égyptiens ont dû regarder à la télé et sur Twitter à cause des mesures de sécurité draconiennes interdisant la présence de la foule. A leur arrivée au nouveau Musée national de la civilisation égyptienne les momies royales ont été accueillies comme des chefs d’État: par 21 coups de canon et le président Abdel Fattah al-Sissi.

Dans leur nouvelle demeure, les momies seront exposées chacune dans une salle individuelle avec la dépouille, le sarcophage et des objets funéraires. La parade visait aussi à promouvoir le tourisme ainsi que l’image du pouvoir égyptien. Le NMEC, qui occupe un vaste bâtiment moderne, doit ouvrir ses portes au public ce 4 avril 2021. Mais les momies ne seront exposées au public qu'à partir du 18 avril. Outre le NMEC, l'Égypte doit inaugurer d'ici quelques mois le Grand musée égyptien (GEM) près des pyramides de Guizeh, qui abritera des collections pharaoniques.

Tapping the Flavors of a Quebec Sugar Shack

I NEVER thought much about maple syrup until I watched it being made.

Sure, tapping sugar maples and boiling the sap might be one of winter’s most enduring images. But it’s one thing to glance at the tiny illustration that decorates almost every bottle of maple syrup (trees and snow, buckets and a cabin), and quite another to spend a frigid day visiting a Québécois cabane à sucre, or sugar shack, and discover that it’s all true: the snowy hills and horse-drawn sleigh, the buckets hanging from trees emptied by burly men with beards.

Or at least that’s what I found at Sucrerie de la Montagne, a rustic compound of split-log cabins that’s just a 45-minute drive from downtown Montreal but looks as though it could be from the 18th century. With just 1,500 tapped trees spread over 120 acres, it’s a tiny syrup operation for Quebec, where 75 percent of the world’s supply is produced.

There are hundreds of cabanes à sucre in Quebec. Usually, a visit is just a day trip, but I was planning to spend the night, and Sucrerie de la Montagne is one of the few that offers accommodations. The rate for my two-story maisonette included dinner — a feast of traditional Québécois food served at rough-hewn tables in a cavernous hall while a fiddle-driven rigodon band played bouncy folkloric music. Because the real reason why you go to a cabane à sucre is to eat and dance.

Originally, the feast was the daily reward for the workers who trudged waist-high in snow to collect sap. At its most traditional, it’s made up of the sort of food you’d find in a larder at the end of winter: beans and salted pork, potatoes and eggs. Eventually, some cabanes à sucre started serving the public, and over time the dinner was embellished. Now it’s not unheard of to serve egg rolls or hot dogs, and a few have taken the haute road, offering oysters on the half shell or grilled wild salmon.

Sucrerie de la Montagne hews to custom. So it was with understandable anticipation that a stream of wholesome-looking families poured out of their cars on a sunny Saturday last March, when the parking lot was as icy as a hockey rink. A crew of teenagers in puffy jackets directed traffic, as my wife and I watched the arrival of a horse-drawn sleigh the size of a small school bus. I grabbed our suitcases, and we climbed on.

We didn’t go far. It was only a three-minute ride to the dining hall, where the bar doubles as the front desk. It would’ve been a five-minute walk on foot, though an awkward one on the icy paths with our luggage, but this was the first sleigh ride of my life, and I was nearly as giddy as the 5-year-olds clambering down onto the snow.

We stepped into the entrance of the dining hall to find Pierre Faucher, the owner, chatting with some guests by a cast-iron wood-burning stove the size of a bank safe. There’s no mistaking Mr. Faucher: there was the Père Noël beard, the bearlike build, the traditional garb complete with a ceinture flèche — a brightly-colored sash wrapped tightly around his waist.

Mitsy, his sister-in-law, ran my credit card and gave me my key and two dining tickets. Though weekend dinners are served all day, most guests schedule their meal according to when the musicians take the stage. The next show was two hours away, at 6 p.m., so we walked to our cabin.

I was told our cabin, named Sous Bois, had once been a pigsty. But now that it was given over to humans, the cabin was comfortable and simple, if a little rough. Upstairs was a queen-sized bed and not much else. Downstairs was a double bed with a cast-iron frame, a kitchenette and some rocking chairs by the deep fireplace. Most importantly, there was an ample supply of wood. The walls, for all their handmade appeal, had a fair share of gaps, and with temperatures dipping below 10 degrees at night, I was a little concerned about the chill.

But a crackling fire lulled us to sleep, and after a quick nap we set off to explore the grounds to look at the sugar maples. These days most sugar shacks run plastic hoses from the trees to save workers the chore of trudging through the snow several times a day. But here, they use galvanized aluminum buckets — some 3,000 of them — which must be emptied by hand. The warmer it gets, the more the syrup runs, and by the end of the season the taps will drip like leaky faucets and the buckets will need to be emptied two or three times a day. But it was a cold day and the buckets were nearly empty.

We didn’t stray far from the buildings, which are spread out along a short hill. They included the overnight cabins, a 100-year-old sawmill, an office and a magasin général, or general store, that sold maple syrup, maple syrup candy and frontier-era crafts like rabbit pelts and rag-wool socks.

From there, it was a short walk to the large shed that held the évaporateur, an enormous steel trough where sugar maple sap is boiled down to syrup. This évaporateur was wood-fired (these days many use gas), and when running at full blast the room fills with sweet-smelling steam. It takes roughly 40 gallons of sap to make one gallon of syrup, and when the process is as artisanal as this, it takes all day.

Later, I was told that all the buildings had been built by hand, many of them by Mr. Faucher himself, with ash and cedar hewn from trees cut down on the land. He bought the property in 1978, then in 1981 started serving food year-round, a radical idea for the time. During maple syrup season, February through April, the restaurant will serve an average of 1,500 people in a weekend. Over the Easter holiday they’ll feed 4,000.

It was almost 6 by the time we reached the dining hall, and it was busy but not unpleasantly so. Stéfan, the owner’s 30-year-old son, was handing out wineglasses of “caribou,” a typical Québécois cocktail of sweetened wine and whiskey. I took a sip, tasted the blueberry wine in the mixture, and ordered a blond ale.

We were led into a large hall with a cathedral ceiling and a stage at the far end. The sun was setting, but there was a glow from the giant stone fireplace that took up almost the entire back wall. This was the largest of three dining rooms, and held around 400 people. Only half of the long tables were full that night, but we sandwiched ourselves between a small group from Valencia, Spain, who were visiting friends in Montreal, and a couple of Quebecers who now lived in Ottawa.

For the Quebecers, this was an annual event. One of them estimated that he’d eaten at 40 different cabanes à sucre in his life. “This one is the best, because it’s the most traditional,” he said.

As we got acquainted, the waiters set down one-liter bottles of maple syrup with a theatrical flourish, along with loaves of white bread baked in the wood oven next door, and mason jars filled with pickled beets, carrots and tomatoes. The waiters were mostly teenagers, and mostly female, and they were dressed in a vaguely traditional costume of white blouses and printed apron smocks. It was a camera-ready pageantry.

The first course was hearty split-pea soup. And just as the soup bowls appeared, a fiddler and a pianist started playing rigodon music, a style that originated in the south of France and has the same rollicking exuberance you hear in Cajun music. If it’s played well, you find yourself dancing before you know it.

But not before eating. A parade of waiters streamed by with platters of thick-cut ham, sausage links, piles of crisp bacon, golf ball-size meatballs, meat pie (which the Quebecers meticulously doused with ketchup), omelets, mashed potatoes and baked beans. We passed the platters among ourselves, family-style.

The table held a constant bounty. As soon as a platter was empty, it was replaced without any of us asking. The food might not have been particularly refined, but it was enormously satisfying, especially when doused with maple syrup. It turns out maple syrup goes with everything.

I should say, real maple syrup. Much of what’s sold in the United States isn’t pure (be wary of “pancake syrup,” which is often made with corn syrup). And not all pure maple syrups are the same. Large commercial operations use reverse osmosis to speed up the process. There’s nothing wrong or illegal with applying a little science, but you lose the layers of flavor that come from an artisanal process.

At its best, maple syrup is more than just sweet. It has gradations of caramel, wood and sometimes smoke, nuances that come from the fire, the evaporation and the open buckets. A good maple syrup is delicious on its own: at some point in the evening, everybody at the table poured a little syrup on a spoon and ate it straight.
